The maturing cellar offers a whole range of cheeses from the region and French products that we have selected ourselves from small producers.
In summer, on weekends and holidays, the cheeses are offered for sale in the cottage opposite the Auberge du Nideck.
Currently, the maturing cellar is being built under the terrace of the Auberge. It is scheduled to open in 2022.
Tours with a maître affineur are scheduled there for individuals.
Groups can learn about the affineur's profession and cheese-making techniques, and enjoy a wine tasting with matching dishes and wines, with the option of including food by arrangement with the Auberge. In the restaurant, you can enjoy regional products such as cheese, sausages and wine in the hall or on the terrace of the Auberge de la Cascade du Nideck, or pick up your picnic basket before the hike.
A shop selling local products and a shuttle service complete the range of sightseeing and gastronomic activities.
