Discover the vineyards of Domaine Siebert in Wolxheim through an experience that is both idyllic and gourmet. Your taste buds will be awakened, your eyes delighted by the floral hues during the creative workshop, and your senses subtly engaged throughout this journey featuring three highlights. At each stage, a surprise awaits you, naturally guiding you to the next… An invitation to savor, feel, and marvel.

Program:
- As you stroll through the vineyards: Estelle Balzer-Leveaux will tell you the story of the estate. Look and listen!
- Floral workshop: in the heart of the vineyards, you’ll have the chance to express your creativity and boldness by creating a floral arrangement. Touch and smell! 
- Country-style lunch: after the workshop, enjoy a three-course lunch inspired by flowers, prepared by Lucas Raugel, Chef at the Auberge de la Bruche restaurant in Dachstein. The dishes will be paired with wines from Domaine Siebert. Savor!

Aperitif:

1824, White Crémant, 2023 vintage, extra-brut

Appetizer: Sea bream tartare with roasted pecans, thyme oil, a veil of hibiscus and lemon balm flowers, arugula pesto

Aged Wolxheim Altenberg Grand Cru Riesling, 2022 vintage, dry wine / Sylvaner Sève, 2022 vintage, dry wine

Main course: Slow-cooked veal loin, elderflower-infused jus, eggplant caviar, zucchini and nasturtium flowers

Pinot Noir from the Voegel vineyard, 2022 vintage, dry wine / Terre de Pinot Noir, 2022 vintage, dry wine

Dessert: White peach, jasmine, and almond; poached peach, almond cream, jasmine granita, financier biscuit, roasted almonds

Essence de Pinot Noir, white Crémant, 2023 vintage, extra-brut / Gewurztraminer Grand Cru Altenberg de Wolxheim, 2023 vintage, sweet wine

Schedule:

- 10:00 AM: meet at Domaine Siebert

- 10:15–10:30 AM: walk through the vineyard

- 10:30 AM–2:30 PM: floral workshop followed by a picnic lunch

- 3:00 PM: return to the estate

Practical information:

- Transportation by car through the vineyards is available for guests with limited mobility

- In case of bad weather, the event will still take place and will be held indoors

The “Vos Diners Insolites en Alsace” event is organized in partnership with the Fédération des Chefs d’Alsace, the Association Etoiles d’Alsace, and Alsace Destination Tourisme.
